Veggie Egg Scramble

A quick and healthy veggie egg scramble packed with protein and fresh vegetables, perfect for a nutritious breakfast.

Ingredients

  • 2 large eggs
  • 1 tablespoon milk or water
  • 1/4 cup fresh spinach, chopped
  • 2 tablespoons red onion, diced
  • 2 tablespoons yellow bell pepper, diced
  • 1 tablespoon red bell pepper, diced
  • 1 teaspoon olive oil or butter
  • 1 tablespoon grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 ripe avocado, mashed
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup fresh raspberries
  • Extra black pepper, for topping

Instructions

  1. Whisk eggs, milk or water, salt, and black pepper in a bowl.
  2. Heat oil or butter in a skillet over medium heat.
  3. Cook onions and bell peppers for 2–3 minutes.
  4. Add spinach and cook until wilted.
  5. Pour egg mixture into the skillet and stir gently.
  6. Sprinkle Parmesan cheese and cook until eggs are fluffy.
  7. Transfer scramble to a plate.
  8. Serve with mashed avocado, cherry tomatoes, and raspberries.
  9. Top with extra black pepper.
